Similar soups are also called wonder soup, weight loss soup, miracle soup, and weight watcher soup. There are so many names for this type of soup!
Ingredients
• 1 head of cabbage sliced & chopped in good bite size pieces or sliced in strips
• A little olive oil to start veggies in
• 4 Ribs celery sliced
• 3 medium onions sliced & chopped in bite size pieces
• 4 cup carrots peeled & sliced
• 1 green bell pepper sliced and chopped in bite size pieces
• 1 red bell pepper sliced and chopped in bite size pieces
• 2-3 cloves garlic minced
• 1 or 2 containers chicken broth or vegetable broth. Even if you would rather use beef broth that's fine. 🔥But by not using the chicken broth the taste changes. And if you want plain Jane then just use water.
• 2 cans 14.5 oz can stewed, diced,seasoned with onions, green peppers & garlic diced tomatoes
• 1 teaspoon oregano
• 1/2 teaspoon thyme
• 1 teaspoon basil
• 1/2 teaspoon Rosemary
• 1 teaspoon onion powder (adds flavor)
• A little fresh Chopped parsley
• 1/2 teaspoon fennel
• 1/2 teaspoon Turmeric
• 1/4 teaspoon smokey Paprika
• 4 Bay leaves
• (optional) a dash of Cayenne pepper 🌶
• few shakes of black pepper
• 1/2 teaspoon Himalayan salt optional
• Optional I added chickpeas for protein.
*** You can change up the spices but when you do you change the flavor.
Instructions
• Put a little olive oil in a large pot over low to medium heat.
• Add the celery, onions, garlic, red & green bell peppers, and carrots.
• Saute on low until slightly tender.
• Pour in about 32 oz of water you may need to add more water as it cooks (makes a nice veggie broth (later you will add the chicken stock/broth towards the end.)
• Stir in the 2 cans of stewed tomatoes and cabbage.
• Bring to a boil and then reduce heat to a simmer.
The liquid will reduce down
• Cook until cabbage is tender the way you like it.
• Stir in oregano, basil, cayenne, onion powder, black pepper and salt (salt if using)
• Add your choice of stock/broth
• If adding chickpeas add them towards the end of cooking.
• Taste broth and adjust seasoning if needed to your liking.
Notes
Taste the soup/broth and change it up to suit your taste by adding more or other spices & herbs. You could even add other veggies.
•Keeps well in the fridge for arround 3 days. Or you could make a big pot and freeze it in individual servings.
